Southwest Meatloaf

Done right, meatloaf is a delicious and kid-friendly meal packed with nutrients.  Add a Southwestern kick, and suddenly your meatloaf goes from drab to fab in under 60 seconds (or as long as it takes to chop the southwest vegetables, I suppose).  Here is a recipe for moist and delicious make-ahead meatloaf that will put an end to the chorus of, "Meatloaf AGAIN?!"


Ingredients
1 1/4 lb ground turkey
2 eggs
1 cup corn meal
1/2 cup carrot, finely shredded
1/2 medium green bell pepper, finely chopped
1 tsp dried oregano
1 tsp ground cumin
1 tsp chili powder
1/4 tsp ground black pepper
1/4 tsp salt
1 (15-oz) can petite diced tomatoes (recommend chipotle, southwest, or mexican flavor)

Make-Ahead Preparation

  • In a large bowl, combine all ingredients except tomatoes.  Tip:  Use a pastry cutter or potato masher to help mix it all together.
  • Coat a bread baking dish with cooking spray.  Pack meat mixture into dish.  Top with tomatoes.  Cover and freeze.
To Serve
  • Thaw completely in refrigerator before cooking.  Cover with foil, and cook at 350° until internal temperature reaches at least 165° (approximately 1 hour).
Prep time:  10 min.
Cook time: 60 min.

Serves: 6
Serving Size: 1/6 loaf
