Mojito Melon Salad

The mint dressing complements all kinds of fruit.
Fruit salad is always a healthy treat.  This recipe adds a new twist - mint - to turn that traditional fruit salad into a dish that will really stand out.
Ingredients
1/2 cantaloupe
1/2 honeydew melon
1 lb strawberries
1 Tbsp dried mint
2 limes
.75 oz fresh mint
1/2 c agave nectar
1/2 c ice cubes

Make-Ahead Preparation
  • Cut fruit (except limes) into chunks.  Flash freeze.  Transfer to airtight freezer container, add dried mint, and seal.  Tip:  If making this recipe to serve same-day, chop 10-20 fresh mint leaves and mix in with fruit, instead of using dried mint.
  • Juice limes; strain juice.
  • Rinse mint; separate leaves from stalks, and discard stalks. 
  • In a deep glass or metal bowl or martini shaker, combine lime juice, mint leaves, and ice.  Muddle mint leaves well.
  • Strain, and discard mint pulp.  Add agave, mixing well.  Place the mint dressing in freezer container or bag and freeze.  
To Serve
  • Thaw fruit and mint dressing.
  • Pour mint dressing over fruit.  Mix and serve.
Whether it's served as a breakfast, brunch, side dish, dessert, or snack, this salad is a simple way to not only keep that fruit fresh for weeks to come, but to also give it some pizazz. Go ahead, bring this to your next potluck - the other guests will be buzzing!

  1. What does the freezing do to the strawberries? The ones I've had upon thawing can be pretty mooshy...

  2. If you "flash freeze" the strawberries, so that they freeze in open air, they hold up well. They'll get more squishy if you freeze them while they're in an airtight container. Sometimes I'll cheat and buy frozen strawberries at the store, as those also work well!
